When did you start butchering?
In 1988 I started my apprenticeship with Heinz Meats and Smallgoods in Woolloongabba QLD (Specializing in German Smallgoods)
Where else have you worked?
Mackay QLD where I worked as a butcher for 11 years which is where I got my first taste of Sausage King Competitions.
Moved to Brisbane QLD and purchased a butcher shop in Chermside where the team and I began a 7 year award winning spree including Best Sausages, Best Pies, Customer Service, and Meat Innovation awards.
Do you have a family?
Yes I have been married since 1994 and I am a proud grandfather.
Hobbies?
Surfing (this does not happen too often anymore as I am always working), Cooking, Entertaining, Camping, Swimming, Talking, and just hanging out!
What is your favourite food?
Love a good well aged steak RARE of course!!
What do you love about Alstonville?
When we first came to visit one of our good friends that lived in Federal at the time, we actually got lost trying to find his house and we ended up in Alstonville. At first sight we all fell in love with the place and said one day we would like to move close to the area and voila look what happened!! We think Alstonville is a gorgeous little town oozing with lovely, caring, and fascinating folk.
Have you ever travelled?
Yes in fact my wife and I went oversees 2014/2015 to Europe it was absolutely fantastic (but not long enough). I dragged her around to all the butcher shops and deli’s I could find as well as the markets, a real eye opener. We will definitely go back again one day. I’ve also been to New Zealand and Tassie which I also think are absolutely stunning places.
Tell us a bit about you and Alstonville Quality Meats?
Well I purchased the butcher shop in 2012 and have not looked back. Thanks to the great team of guys, we have managed to win many awards every year (Regional, State and finalist at the Nationals) for our Sausages and Best Butchers Burgers. I am really passionate about butchering and enjoy sharing innovative ideas amongst my staff and other butchers in the industry. I also love to invent new and exciting products that are good for you by incorporating REAL INGREDIENTS.
